Joseon takes over the ill-fated space most recently occupied by Causita. It’s another take on modern Korean fusion.

Amuse of crispy seaweed wrapped rice cake. Interesting chew, but a touch bland.
Kushi Oysters on the Halfshell, Kimchee Mignonette. Very nice and bright.
죽 JUK | PORRIDGE. Lotus Root Porridge, Azuki Bean, Doenjang Dusted Crisp. Far too bland for my taste. Interesting ultra-smooth texture like mashed potato puree.
회 HOE/HWE | TARTARE. Perilla Cured Tasmanian Sea Trout, Edamame Bavarois, Yuzu Jalapeno Gele. Bright and tasty.
회 HOE/HWE | TARTARE. Hall Farmstead Wagyu Beef Tartare, Asian Pear, Soy Egg Jam, Perilla, Seaweed Cracker. Very nice tartare and the crispy seaweed was delicious.
Wagyu Bone Marrow. Garlbee Jjim, Kimchee Duxelles, Sesame Flatbread. One of the best bone marrow dishes I can remember. I’m not normally a huge marrow fan. It was all abut the beef here which was super savory and tasty — and really good on those pancake-like flatbreads.
전 JEON | EGG BATTERED. Gamja Jeon Reimagined, Garnet and Asian Yam Puff, Gochujang Carrot Puree, Calvisius Caviar. Solid, but a bit sweet.
만두 WANG MANDU | ROYAL DUMPLINGS. Taiwanese Inspired, Ginger Pork Rillette, King Oyster Mushroom Fume, Korean Chile Oil.
Prawn Bokkeum. Spicy Gochu Sauce, Cilantro Scallion Salad. These were hyper delicious. Great sauce.
구이 GUI | BBQ. Confit Duck Breast, Kimchee Duck Sauce, Ssam Style. The pork version coming up was better.
구이 GUI | BBQ. Berkshire Pork Belly, Jiajang Style, Gochu Takuan Relish.
Bossam. Ssam Style, Berkshire Pork Belly, Plum Glaze, Fuji Apple Ssamjang, Pickled Weiser Napa, Seasonal Accompaniments. This was a great plate as the picture and fermented flavors paired nicely with the very fatty pork.
찜 JJIM | BRAISED STEW. Galbee Jjim, Wasabi Cauliflower Puree, Market Vegetables, Puffed Mung Bean Vermicelli.

Rice Pudding like creme brûlée.
Very interesting meal. Super far, in a cursed (Causita) space, but very interesting Korean fusion. This is closer to regular Korean than Kinn, but certainly with modern plating. Not every dish was a hit, but some were definitely pretty awesome.
